Sautéed onions:

1 tsp olive oil
1 tsp truffle oil
1/2 yellow onion
1/2 white onion
1 shallot
3 garlic cloves
2 green onions

1/2 cup plain yogurt
1/4 cup mayonnaise (earth balance soy free vegan)

Dash of Krazy Janes basil salt

Dash of cayenne

This recipe is dangerous! So tasty. Reminds me of the processed stuff I loved as a kid.

When you want a potato snack in less than 5 mins

Peel and grate 2 large potatoes add to bowl,
Whisk one large egg and add to bowl
Add half a chopped brown onion and a 1/4 tsp chopped garlic
Add 2 tsp Dijon mustard
And some Parmesan cheese
Add 1/4 tsp salt

Heat oil (i used sesame) in a fry pan and cook potato cakes until golden
Serve with ketchup, hot sauce or sour cream
